I made chicken the other night for dinner and had two pieces of boneless, skinless chicken breasts left in the frige. No idea what to do with them, so I brainstormed. Ah-ha! Ground chicken! I removed all fat, sliced them in half and threw them in my ninja one breast at a time. I grinded it up like crazy! Tossed everything in a pan with water. While cooking I chopped, chopped and chopped to keep it from cooking into one piece. Raised the heat and covered. Then simmer for a few moments to cook off the extra water. Allowed it to cool and bagged it for the freezer. Two breasts made about a pound of ground chicken. Perfect for putting in spaghetti, chicken bbq, tacos, burritos, casseroles...just about anything. It can also replace ground beef. Its much healthier and cheaper!!
